Ah, toast and avocado was my staple snack through college. I was a bit burnt out, so I haven't had it in awhile, but your picture is bringing back fond memories!

You do not even know how much I enjoy a good tomato and cucumber salad with olive oil and vinegar. One of my faves... and I have never even thought to put avocado in there. Now I am even more glad that I posted this and that you had a long comment! Ha.

like you i did not grow up eating avocados and the only form i ever saw it in was guacamole. GROSSED ME OUT.
then one day, at my first job out of college, a coworker was CHOWING DOWN on an avocado/cucumber/tomato salad. unattractive eating but somehow so incredibly sexy. i went home that night and bought two avocados, never having played with it before, and made that simple salad. it is now my go to salad or side dish. (recipe: avocado, tomato and cucumber cut up in almost same sizes, season with salt/pepper and drizzle olive oil and splash of vinegar. DONE)
sorry for the long comment, i just wanted you to know that i totally get you, avocado rocks.

I've read so many eloquent posts about the simple delight of avocado on toast. Next time I have a perfect avocado on hand, it's not being turned into guacamole. It's going to be breakfast.

Ha. In fact, as it were, when first visiting your blog, this post caught my eye. And I thought "Now there's a post worth checking out!"
